Lion’s Mane (Hericium erinaceus)

Named after their shaggy mane, these healthy and delicious mushrooms rate top-shelf for mushroom enthusiasts. They contain several bioactive substances that benefit the brain, heart and gut.


Favorite Recipe: Lion’s Man (Crab) Cakes  

Golden Oysters (Pleurotus citrinopileatus)

  Named for their beautiful color, this mushroom also has an amazing almost nutty cashew like flavor. These mushrooms also contain many beneficial nutrients like potassium, zinc, protein, fiber, vitamin B5, niacin, choline, phosphorus, vitamin D, and selenium.


Favorite Recipe: Truly Golden Mushroom Soup  

Velvet Pioppino (Agrocybe aegerita)

  The umami of the Pioppino is why it’s the number one mushroom on my wife’s list. It can be used in so many traditional mushroom recipes where excellent mushroom flavor is wanted without any of the common texture criticisms. This is a very smooth tasting mushroom that has also been used for centuries for gut and kidney health.


Favorite Recipe: Pan-fried Pioppino Mushrooms 

Blue Oysters (Pleurotus ostreatus v. Columbinus)

    This beautiful wide capped mushroom is both stunning and delicious. The oyster mushroom also carries the distinction of being one of the only plant-based sources of vitamin D. And it gets even richer when sun-dried.
